the Effect of Sweetener in Ice Cream
Sweeteners are used in ice cream to make it more delicious. A sweetener is a food additive that provides a sweet taste. Some sweeteners are natural and some are synthetic. Those that are not natural are, in general, called artificial sweeteners. Traditionally, sucrose, commonly referred to as granulated or table sugar, was the only sweetener used in ice cream. Today, many sweeteners, including dextrose, fructose, sucrose, lactose, maltose, honey, invert sugar, molasses, brown sugar and corn syrups, are used.
In ice creams, sweeteners are not only responsible for taste, but also control the softness of the ice cream, the more sweetener in a mix, the softer it will be.

How to Make Chocolate Ice Cream Easily
Chocolate ice cream is delicious. Is the production process of chocolate ice cream complicated? The answer is "No". How to make chocolate ice cream easily?
We need:
1/2 pint (250ml) whole milk,
1 can (large) condensed milk.
Do not forget the cocoa powder, we need 5 tablespoons of cocoa powder.
Instructions:
1. Mix together the milk a-nd condensed milk.
2. Dissolve the cocoa powder in a little hot water. When fully dissolved, stir it into the milk a-nd condensed milk mixture.
3. Transfer the mixture into an ice cream machine, a-nd freeze according to the instructions of manufacturer.

Ice Cream Molds
Ice cream has different shapes. A rabbit shape, a spaceship shape, even a corn shape. Most of ice cream molds are made of special alloys (for example Stainless Steel) that have good heat transfer capacity, mechanical durability, resistance to brine, and resistant to corrosion from cleaning and sanitizing. Some ice cream molds can also be made from plastics which have particular advantages in threedimensional effects. Generally, molds are 0.75 in (0.22 mm) thick, and volumes of molds vary from 1.8 fl oz (50 mL) to 2.8 fl oz (75 mL).
In order to improve the accuracy, we use computer to design the volumes of mold cup. And assemble the mold cup with a computerized welding robotic. Laser cutting to ensure precise on size. Then the completed molds are electro polished. To adapt to different machines, there are linear machine molds and rotary machine molds.

Who was the First Man Popularised Ice Cream
It may be Carlo Gatti(1817-1878). In the Mediterranean, ice cream appears to have been accessible to ordinary people by the mid eighteenth century. Ice cream became popular and inexpensive in England in the mid nineteenth century, due to the efforts of a Swiss emigre Carlo Gatti. Carlo Gatti was a Swiss entrepreneur in the Victorian era. In 1851, he set up the first stall outside Charing Cross station, selling scoops of ice cream in shells for one penny to the public, previously, ice cream was an expensive treat confined to rich people with access to an ice house. He built a large "ice well" for storage of the ice that he took from Regent‘s Canal under a contract with the Regent s Canal Company. By 1860, with a rapidly expanding business, he began importing ice on a large scale from Norway.

Fried Ice Cream
Fried ice cream, a unique, hot and cold treat, is a dessert made from a breaded scoop of ice cream that is quickly deep-fried creating a warm, crispy shell around the still-cold ice cream. It combines the heat of fritters with the cold of ice cream. Have you ever tried this wonderful hot-and-cold combination? The secret of this delicacy is in freezing the ice cream more than usual (meaning even below the temperature at which we usually serve it). Once the right temperature is reached, the ice cream is covered with raw egg, cornflakes and tortilla crumbs. It is then fried for a few seconds. We really do not know for sure who came up with this unique idea, but we know that it is delicious!

Ice Cream around the World-China
The frozen mixture of milk and rice was used in China around 200 BC. The Chinese may be credited with inventing a device to make sorbets and ice cream. They poured a mixture of snow and saltpetre over the exteriors of containers filled with syrup, for, in the same way as salt raises the boiling-point of water, it lowers the freezing-point to below zero. It has been claimed that, in the Yuan Dynasty, Kublai Khan enjoyed ice cream and kept it a royal secret until Marco Polo visited China and took the technique of making ice cream to Italy.

WHAT IS OVERRUN
What is Overrun? In the process of ice cream production, overrun is the amount of air that is whipped into the ice cream mixture that keeps the mixture from becoming an inedible frozen mass. For example, an overrun of 100% would mean for every gallon of ice cream mix, you get two gallons of finished ice cream. Without the air, the frozen ice cream mix would resemble an ice cube. Smooth and soft ice cream, or a frozen icy milk, which do you like?

the Largest Ice Cream Scoop in the World
June 28, 2014, to commemorate its 100th anniversary, Kemps Dairy set the record for the largest scoop of ice cream in Cedarburg, Wisconsin. The historic serving tipped the scales at 1,365.31 kg (3,010 lb). The flavor of the ice cream is refreshing strawberry. The scoop measured 5 ft, 6 in (1.67 m) tall and 6 ft, 2 in (1.88 m) wide, containing approximately 733 household containers of ice cream combined into one mass. To accomplish this, Kemps enlisted five nationally-ranked snow sculptors from Minnesota Big Snow to carve 733 containers worth of strawberry ice cream. According to Kemps, the amount of ice cream used would fill an entire football field. The feat was verified by a Guinness World Records judge. Once the record was officially set at 12 Noon that day, hundreds of Strawberry Festival attendees had the exclusive opportunity to actually eat a part of Kemps’ historic scoop.

Helado is a Spanish word for ice cream. The most traditional Argentine helado is very similar to Italian gelato, rather than US-style ice cream, and it has become one of the most popular desserts in Argentine. Lots of people think that Argentina ice cream is delicious enough to compete with the likes of Spain and Italy. While industrial ice cream exists in Argentina, it can be found in supermarkets, kiosks or restaurants, and ice cream pops are sold on some streets and at the beaches. The most famous manufacturers in Argentine are "Freddo," "Chungo," "Persicco," and "Munchi's," ,and all of them located in Buenos Aires. Each city has its own heladerĂas (ice cream parlours) which offer different varieties of creamy and water-based ice creams, including both standard and regional flavours. But the most traditional and popular one in Argentina is dulce de leche. If you have ever been to Argentina, or simply tasted dulce de leche, this shouldn’t surprise you.
The cones and cups are serious business in Argentina. There are so many different ice cream receptacles to choose from. When you ordering a scoop (or several) ice ceam, you will often be asked "vasito o cucurucho?". It is a complicated question.

the Most Expensive Ice Cream in the World
Got 1000 dollars? Let's go to eat ice cream! The Golden Opulence Sundae, which is worth 1000 dollars, is an ice cream sundae that be served by special order at the New York City restaurant Serendipity. It was listed in Guinness World Records as the most expensive sundae in the world at a price of US$1,000 in 2007. It was created to celebrate the eatery's 50th-"golden"-anniversary in 2005. According to the restaurant, they sell approximately one a month, so apparently, quite a few people have some money to indulge in such opulence. Owner Stephen Bruce states that a notice 48 hours in advance is needed when requesting the Sundae, since ingredients must be flown in from different parts of the world.
